Vegan, Peach & Sweet Cherry Cobbler

This recipe is alive with dense nutrients for health

 

Place in one bowl: (filling)

1 package of organic peaches or fresh peaches cut into 1/8 slices (about 4 -5 cups)

¼ package of dark sweet cherries (add more if you like) (about 1 cup)

3 tbsp of maple syrup

The rind of 1 organic lemon

1 tbsp of arrowroot flour or two tsp of tapioca flour

2 tsp of ground cinnamon

2 tbsp of lemon juice

¼ tsp of Celtic or Himalayan Sea Salt

Directions: Mix the above ingredients by hand in the bowl coating all fruit.

 

In a small dish create a vegan egg (allow to gel for 10 minutes):

2 tbsp of ground flax meal

5 tbsp of water

1 tbsp of real vanilla paste

 

Meanwhile in prep land: In a 13x9 dish, place 2 tbsp of extra virgin coconut oil to melt in a casserole dish briefly in the oven (3 mins at 340 degrees). Place the above berries (bowl one) evenly in the dish and cook in the oven at 340 for 10 minutes until slightly brown and set aside.

 

Place in a second bowl the cobbler topping (dry) ingredients:

½ cup of tigernut flour (a root flour – amazon.ca)

¼ cup of cassava flour

½ cup of arrowroot flour

2 -3 tbsp of coconut sugar

1 tsp of Celtic sea salt

2 tsp of baking soda

 

Mix dry ingredients with vegan egg, and then add ¼ cup of organic cold-pressed and unrefined coconut oil and ¼ cup of fresh lemon juice. If you need to add more moisture, try adding a small amount (1/4 cup) of coconut milk (unsweetened vanilla) or the full-fat part of coconut cream from organic canned coconut cream. Mix and place scoops evenly over the berries. Note that not all of the berries will not be covered and that’s okay it’s part of the presentation! If desired, top with organic shredded coconut and a bit of sprinkled coconut sugar.

Bake in the oven for 25-30 minutes at 340 degrees or until slightly brown and bubbling.

Allow to cool for 15 minutes for the filling to harden and enjoy with a scoop of coconut Madagascar vanilla ice cream. You can even drizzle a small amount of the fatty coconut cream after cooking. Also, feel free to swap peaches for any seasonal fruit.

 

Facts:

Coconut cold-pressed unrefined oil is a good fat and helps to absorb nutrients from the food we eat.

Paleo flours are filled with nutrients and are easily digestible. Tigernut flour contains vitamin B6, calcium, potassium, zinc, magnesium, and iron. It’s a fat, fiber, and protein paleo flour. It contains lots of dietary flour to regulate blood sugar so good for diabetics too.
